Good lunches are warm, include chips, are reasonably healthy, and colorful. Yum.
When I know I’m going to have a busy day, I get dinner on the table efficiently by making this “from-scratch” version of Hamburger Helper.
This is my at-home version of a restaurant lunch favorite.

I think of it as magic since it can take a small portion of leftovers and make an additonal dinner (or luxe breakfast) from it.
This longtime favorite can be composed entirely of store-bought shortcuts – though I strongly recommend roasting your own peppers rather than buying the jarred kind.
