Chocolate for Lunch
I like the idea of Nutella, but I don’t like that the first ingredient is sugar. Making a healthy, hearty version with honey means you don’t have to save it for dessert. Serve in a sandwich with sliced banana; try it on toast, pancakes or waffles. Instantly elevates a simple graham cracker or rice cake to treat status.
Chocolate Hazelnut Spread
(Makes 1.25 cups) In a 2-cup glass measuring cup, combine:
- 1/4 cup coconut milk
- 3/4 cup ground hazelnuts
- 1/4 cup honey
- 2 tsp vanilla
- 3 Tbsp cocoa powder
- ΒΌ tsp salt
Add more honey to taste. Add more coconut milk if it seems too thick. Store in the fridge in an airtight container.
