Cake for Two
We enjoy a weekly family routine of “One on one” time, parents trading off taking one kid out while the other pair stays home. This “mug cake” is a perfect impromptu treat for a parent and child to share, or to turn a pint of ice cream into a party for two or three.
Butter a small microwave-safe bowl.
Melt 2 Tbsp butter in a 1-cup glass measuring cup.
- In a small mixing bowl, whisk to combine:
- 1/4 cup all-purpose flour
- 3 Tbsp sugar
- 2 Tbsp cocoa powder
- 1/4 tsp baking powder
- 1/8 tsp salt
- To melted butter, add and stir in:
- 1/4 cup milk
- 1/4 tsp vanilla
Pour wet into dry, whisk until smooth. Scrape into prepared bowl. Optional: Sprinkle with several tablespoons of chocolate or other flavored baking chips.
Microwave for 1 minute, check it, then for another minute or so, checking every 30 seconds, until toothpick comes out mostly clean. Top with sprinkles if desired, let cool at least 10 minutes, and dig in. So yummy!
