Thankful Pie

I am so thankful for leftovers! And not just after Thanksgiving… any day of the week I relish a hot lunch of leftover soup or casserole. Mmm.

With my leftover turkey, gravy, and mashed potatoes, I made a “cottage” version of Skillet Pot Pie. It was really good. (Now, I have never been much of a stuffing fan. I usually skip it at the big Thanksgiving meal, to leave room on my plate for other things! But, I imagine if you have leftover stuffing it would make a lovely topping for this Leftover Pie.)

Next project: Turkey Stock so we can have soup this weekend!
