An Easy Classic

Deb at Smitten Kitchen has been a cooking and blogging inspiration to me for a very long time. I’ve had good results from every recipe of hers that I’ve tried, and these easy meatballs were no exception.

My mods were as follows:

  • Sprinkled 1/4 tsp baking soda over the beef after breaking it up and adding it to the mixing bowl. (ATK trick to promote moisture retention)
  • Doubled or tripled the garlic in both meatballs and sauce. Because we are garlicky folks here.
  • Added some dried oregano to the sauce.
