Pizza-dillas
When we make quesadillas (which is pretty often), we make them with add-ins with the cheese (usually black beans). I came up with a pizza flavor variation. It’s quite delicious, and very popular with the kiddos.
- Tortillas
- Tomato paste
- Garlic powder
- Oregano
- Pepperoni, cut into small pieces
- Mozzarella cheese, shredded
- Optional: sliced olives
- Butter
Preheat your skillet or griddle pan over low heat. Spread tomato paste on a tortilla. Sprinkle with garlic and oregano. Add a few pieces of pepperoni. Melt a teaspoon or two of butter, and slide the tortilla into the pan. Sprinkle all over with cheese, and add black olives if desired. When cheese is melted, fold tortilla in half. Continue to cook, flipping once, until browned on both sides. Cut into wedges and serve.
