Best Lunch Ever
I like to have a good lunch. (Much like Albert the Badger, of Russell Hoban’s Frances books)
Good lunches are warm, include chips, are reasonably healthy, and colorful. Yum.
Enter… Loaded Nachos! You can put whatever you like on them, use up the last of the lefover taco filling or party dips. I think of the following as the bare essentials:
- Tortilla chips
- Refried beans
- Grated cheese
- Bake ’em in the oven if you’re making a big batch or microwave for a minute plus if you’re just making one serving. Once they’re all melted, top with:
- Sour cream
- Salsa or hot sauce
- Chopped tomatoes
- Sliced green onions
Avocados, olives, cilantro, pico-de-gallo, pickled jalapeƱos, or even unusual items like pumpkin seeds or ranch dressing will elevate these to even greater heights of lunch stardom.
