Pickled Red Onions
Who knew onions could be so popular? My kids can’t get enough of these pickled onions on a Mexican-style dinner, hamburgers, hot dogs, or most any savory meal.
- 1 medium red onion, thinly sliced from pole-to-pole
- ½ cup white vinegar
- 2 Tbsp lime or lemon juice
- 1 Tbsp sugar
- ½ tsp salt
Pack sliced onion into a pint jar with a snug lid. Combine other ingredients in a glass measuring cup, stirring to dissolve salt and sugar. Microwave until simmering, then pour over onions. Stir and press the onions below the liquid, then let stand 1 hour before serving with a meal or refrigerating for a week or two. (They never last that long in my house!) You can re-use the brine for a second batch; taste and add a bit more salt if needed.
