A fun variation on those easy Oven Fries. Try them with burgers this time!
Cut 2 large sweet potatoes (about 2 lbs) into 1/2 inch planks. In a large bowl, toss with 2 Tbsp potato starch. Then, toss with 2-3 Tbsp avocado oil (should be well-coated). Arrange in an even layer on 2 griddle pans, leaving space between each. Cover pans with foil. Place pans on bottom oven rack, with cast iron skillet on middle rack. Preheat oven to 425.
Meanwhile, using about 1/2 lb ground beef per patty, form and season burgers. I like to dust each patty with a pinch of baking soda, then sprinkle with salt, pepper, and garlic powder.
When oven is done preheating, remove foil from potatoes. Sprinkle tops with salt, and check bottom sides for browning. When bottoms are browned, flip and sprinkle with salt again.
Pull the cast iron skillet out onto the stove top. Turn heat to medium-high and brush a few drops of oil over the pan’s surface. When first wisp of smoke appears, arrange the burgers in the pan. Cook, flipping once, until well-browned on both sides. Turn off heat and put a slice of cheese on each. Let it melt while you toast the buns, gather condiments, and finish up the potatoes:
When the potatoes are browned on second side, remove from oven, sprinkle with a little more salt, and serve immediately with burgers. Don’t forget the ketchup!
