Drop-of-a-hat Biscuits
Traditional, flaky biscuits are going to win the beauty contest every time, but these 20-minute wonders are so quick to make that you will love them for what they are – soft, warm, fresh, and the perfect partner for soup or omelets.
Quick Drop Biscuits (Makes 8-10)
- 1.75 cups flour (I like to use 1 cup all-purpose and 3/4 cup whole wheat)
- 1/2 tsp salt
- 3 tsp baking powder
- 4 Tbsp chilled butter
- 1 cup milk
Preheat oven to 450. In a large bowl, stir together flour, salt and baking powder. Cut the butter into chunks and work into the flour mixture using a pastry blender until uniformly crumbly and no large chunks of butter remain. Pour in milk and mix until just combined. Drop by 1/4 cupfuls onto a baking sheet, and bake until lightly browned, 10-12 minutes. Serve immediately with honey or jam.
