Caesar Salad
Caesar Salad Dressing (Makes 1/2 c, 4 servings)
1 small lemon, zested (1 t) and juiced (2 T)
2-3 cloves garlic, crushed in a garlic press
1/4 c. olive oil
1 T white wine vinegar
1 t dijon mustard
1 T mayonnaise
1 t Worcestershire sauce
1/2 t salt
1/2 t pepper
Salad components: Romaine lettuce, croutons, freshly grated Parmesan cheese, optional: grilled or broiled chicken, sliced. Sometimes I add non-traditional items like hard boiled eggs, red onions, or salmon.
